Keto Berry Cheesecake Fluff

Over fourth of July week, I came across a delicious looking recipe on Facebook for this berry cheesecake salad that looked just amazing. There was only one problem…..TONS of sugar! I set out to come up with a Keto friendly version of this delicious looking patriotic treat and viola! Here is Keto berry fluff!

Almost every Memorial Day, 4th of July or Veterans Day, my mother would whip up some sort of delicious concoction on top of which she would delicately arrange rows of blueberries and strawberries into the shape of an American flag. I know that I am not the first to recognize these berries’ high demand during these times of the year. And why not? Blueberries and strawberries are rich in antioxidants, deliciously sweet and some of the lowest fruits on the glycemic index. Not being able to find a very simple low carb version of this recipe, I decided to adapt a sugary version to suit our family.

I’ll warn you before the recipe, I’m not sure just how many servings there are, but when you add up the ingredients, the only ones that contain significant carbohydrates are the berries so I usually just count the carbs contained in the amount of berries I scoop onto my plate. Mmmmm!! I hope you enjoy this delicious treat and don’t forget to share. We low-carbers need to stick together!!

Kara’s Keto Berry Cheesecake Fluff

2 cups quartered strawberries

2 cups clean blueberries

1 cup blackberries

1 cup raspberries

1 8oz block of cream cheese at room temp.

2 cups whipping cream

1 tsp vanilla extract

1 cup Swerve confectioners sweetener (split into 2 half cups)

Lay out the berries on a couple of layers of paper towels after washing to soak up excess moister. Begin to cream the cream cheese in a mixer with 1/2 a cup of the Swerve and vanilla extract. When these are all well incorporated, set the mixture aside and begin whipping the heavy cream with a mixer or hand mixer until peaks form, but not too long (don’t want to get to whipped butter status). Once the cream is a light whipped cream, add the second half of the Swerve and let whip a few seconds more to mix well. Add the cream cheese mixture to the whipped cream and beat at medium until well mixed. Stop mixer and fold in berries using a rubber spatula gently so not to squish or puncture the berries.

Serve up and enjoy!!

*I am not big on counting every little carb, but I will point out that none of the ingredients have more than 1 carb except the berries, so if you are counting carbs, I recommend counting those in the amount of berries you serve up.

**Further, some people like to count Swerve’s carbs, but that simply isn’t necessary as they are unmetabolized carbs that for all intents and purposes are peed out (sorry TMI)

    Gosh, Im very greatful for finding your blog posts here. I happen to find it by just diving deeper on Pinterest.

    My wife and I will try your recipes here. Im 60 and she is 55 and we are needing to do better in health and nutrition. I only know of one nutritionist at the VA center and that person is really not on board with Keto. In fact, what Im discovering is that the Dr’s I’ve been able to speak to all have similar attitudes, and that is Keto is not looked at in such a positive way. Thats a shame. Maybe they say that to just be cautious or maybe they really are stuck in the 70’s. Whayever the reason, we’ve been going at it alone and just self educating ourselves.

    Anyway, I just want to say thank you for your dedication. Im very greatful.

      Yes, I haven’t found a traditional MD who supports a wholistic approach either. I’m so glad to have a lot of scientific studies being done with regards to Keto. Hopefully with this will come more buy-in for doctors.

      I’m so glad you enjoy the site, being a busy mom I don’t always get to spend the time I’d like on it, but every post is a documentation of what my family try’s to incorporate as a way of life ♥️
