I’ve seen mac n cheese baked, with crunchy onion ring topping, creamy, thick, you name it! My favorite mac n cheese has always been the kind with the thick and creamy perfect combination sauce. NEVER baked, always cheddar and with a sharp salt-and-pepper seasoning.
I am more than pleased with how this recipe turned out. It had my kids asking for “MORE please!” Who doesn’t want their kiddos asking for more cauliflower??
Best EVER Keto Mac N Cheese
4-6 cups cauliflower rice
2+2 Tbsp divided
salt and pepper to taste
2/3 cup heavy cream
1/2 cup sour cream (full fat)
1 3/4 cup sharp cheddar cheese, shredded
On medium, melt the first 2 Tbsp of butter and then add the cauliflower rice and cook for 4-5 minutes until aldente. Set aside while you start the sauce. In a small saucepan, melt the other 2 Tbsp of butter and then add the cream and sour cream. Bring to a simmer on medium, then add the cheese and salt and pepper to taste. Whisk frequently until the cheese has melted and the sauce is a consistent orange color. Pour over the cauliflower rice and stir well. Allow to settle down for about 3-5 minutes and during this time it will thicken. Serve and enjoy!
