Move over Starbucks!! I’m maybe a little too excited about these. They are a celebration of my son who has just turned 2 years old this week. His sweet understated personality very much echoes the sentiment found in today’s cake pops. I can’t believe that only 2 years ago, I held him as a tiny 6 lb. infant. Now he’s addicting to be around as these little treats are to eat.
You’ve heard of cake pops I assume? They are a delicious blending of your favorite cake and cream cheese to make a high fat and creamy bite size snack or dessert. The wonderful thing is, these little naughty balls are only 2.3 net carbs each!

But I will give you what you need to know about turning her amazing cake into a FABULOUS fat bomb treat below!
Keto Vanilla Cake Pop Bites
Recipe for Kentucky Butter Cake Keto baked in 19 cupcake liners about 3/4 full for 25-30 minutes until golden and firm
8oz cream cheese, softened
1 Tbsp Pure sweetener blend (can be found at Walmart)
Add 12 cupcakes to mixer and all other ingredients (you can freeze the remaining cupcakes for later) and mix as shown below in this video. Cover in plastic wrap and refrigerate 1 hour. Using a small cookie scoop or tablespoon, scoop out 33 balls onto foil or parchment paper and refrigerate until firm. Store in refrigerator if eating soon, or long term in the freezer. Enjoy!!
