Snickerdoodle Cookie Dough Fat Bombs (Keto, Super Low Carb!!!)

I am coming out of my skin with these cookie dough fat bombs! The fact that I can eat cookie dough and get skinny is out of this world! Some of you may remember my Chocolate Chip Cookie Dough fat bombs. I couldn’t be more thrilled to hear that people who were discouraged in their healthy eating found this recipe and it helped them stay on course and actually enjoy their diet, changing it into a lifestyle! We are going to cut straight to the chase today. Pictured beneath the recipe are some easy steps to making these lovelies part of your chow line-up, but first, the recipe! I think yall can appreciate not having to scroll to the bottom for this (winky face, winky face).

Keto Snickerdoodle Cookie Dough Fat Bomb Recipe (Before the pics, oh yeah, no scrolling, uh huh!)

8 oz cream cheese

1 stick (1/2 cup) butter, unsalted (if you use salted, simply omit salt in this recipe)

1/2 cup creamy peanut or almond butter

1/3 cup Swerve, confectioners OR granulated will work

1/2 tsp cinnamon

1/2 tsp of vanilla extract

1/4 tsp salt

For the Coating:

3 Tbsp Swerve, confectioners preferable

1 Tbsp cinnamon

dash of salt (optional)

Mix all the main ingredients together in one bowl, scoop into plastic wrap and refrigerate for 30 minutes to firm. Mix the coating ingredients in a small dish or measuring cup and set aside. Form dough into small balls (I got 21) and drop each one into coating, turning over to coat well. Set on a lined pan in the fridge or freezer. Once totally firm, store in fridge for soft dough balls, or freezer for firmer dough. Enjoy!

Today’s cookie dough fat bombs are inspired by our delicious Fall seasonal favorite cookie: The Snickerdoodle! Yum! Snickerdoodles are actually my sister’s favorite cookie and my husband has been requesting my Keto Snickerdoodles lately. I decided to surprise him coming home from work and since cookie dough is always a good idea, here are some sweet simple steps for these 1 carb each treats!

Mix all ingredients (expect for outer coating) and lump into a ball…

Roll the dough into 21 little balls….

    I’m confused, 1/3 cup of swerve confectioners would be 48 carbs and 21 balls would make it 2 carbs per ball wouldn’t it?

      Actually I’m even more confused 1/2 peanut butter and 1/3 cup of swerve plus the 3 tablespoons of swerve my math shows the balls are 4.49 carbs for each (I used Nara Martha peanut butter) mine only made 20 but 21 would put it at

      You are so right, we do not count erythritol carbs because they are not metabolized, you literally urinate them out so dont count those 😊
