Baked Bacon Ranch Chicken Thighs (Keto, low carb)

Chicken thighs are perfect for Keto as you are trying to get a majority of your fat intake from animal sources. I look for the ones with the skin still on (yum) and preferably organic.

This recipe represents what I am all about. Quick and simple enough to throw together so that you don’t spend all of your time in the kitchen. This family approved recipe will be perfect for busy weeknights.

Speaking of weeknights, I made these Wednesday night and Hubby asked if I’d be posting the recipe. He said he definitely recommended my sharing with you all! I love having such a sweet supportive husband!

Here’s what I did,

Took about 6 or 7 chicken thighs and put them in a gallon sized zip top bag

Mixed 3/4 cup greek yogurt with

1 tsp salt

3 crispy bacon strips

1/2 tsp black pepper

1/2 tsp onion powder

3/4 tsp garlic powder

1 tbsp olive oil

1 tsp dried parsley

1/2 tsp smoked paprika (divine!!)

Then I poured it in on top of the chicken thighs and massaged it in a little to get the flavors starting to penetrate. I let these marinate for 2 hours, but I have also cooked these right after the “chicken massage.”

Bake in a 375º oven for 50 minutes, enjoy!

    I’m going to have to try that now. Chicken thighs are my go to cheap, but healthy meat.

    One of my chicken thighs recipes, if you are looking to try something new, is a variation on shake n’ bake. Where I crush up some pork rinds, throw in some garlic powder, onion powder, paprika, cumin, parsley and other goodness, then shake in a ziplock bag, then bake.
