4 smallish limes, zested and juiced
1 stick salted butter
4 oz cream cheese
3/4 cup coconut oil
55 drops liquid stevia
1/2 tsp vanilla extract
In a small saucepan on low melt all ingredients except cream cheese and coconut oil whisking slowly until completely incorporated, allow to cool slightly. Mix coconut oil and cream cheese then mix into cooled mixture (otherwise the oil will separate). Pour by tablespoonfuls into silicone candy molds, ice cube trays or other easy-to-remove vessel and transfer to freezer for 1 hour, then store in zip bags in the refrigerator. Makes about 22.
