These delicious low-carb grain-free scones are perfect for a hot cup of coffee and complete over consumption. There seriously is no describing the soft fluffiness of these scones, just seriously, try them!!
Recipe
1 cup almond flour
1 tsp baking soda
1/8 cup Swerve sweetener (erythritol)
Pinch of salt
1/2 tsp of cinnamon
1 egg, whisked
1/8 cup melted coconut oil
1/2 tsp vanilla extract
5 drops liquid stevia
1 tbsp heavy cream
Preheat oven to 325°. Mix dry ingredients, then add wet and stir until just combined, mash the dough into a round shape about 1.25″ thick between two pieces of parchment paper. Using a knife or pizza cutter cut into triangles (about 6-7), then with a pie server move the pieces carefully about a quarter inch apart and bake for 20 minutes. While cooling, but still warm, smear with frosting.
Frosting recipe
2oz of cream cheese softened
1 tbsp honey
1/4 tsp cinnamon
1 tbsp melted coconut oil
4 drops liquid stevia
Mix well until smooth and frost scones while still warm.
