Call them what you want, black forest cherry, chocolate covered, or cookie with cherry, eem err gooood!!! These are crunchy around the edges, chewy in the middle and taste a little like brownies. If the fact that the cherry is not ACTUALLY covered bothers you, melt some extra chocolate chips and cover that sucker!! But if you like a cakier cookie, replace all honey with equal amount of coconut sugar and enjoy manna from heaven y’all.
Lately I’ve got that itch, the one that only chocolate can scratch….Sorry, didn’t mean to weird you out there….
Anywho, I love me some almond butter cookies! Last night I made these for our teens at church and thank God they helped me eat them all, because as well behaved as these cookies are, I seriously don’t need to handle them all myself!!
1 cup thick almond butter
1/3 cup coconut sugar
2/3 cup honey
1/2 cup cocoa powder
1 tsp vanilla extract
1 tsp baking soda
1/2 cup chocolate chips
Mix all ingredients except for cherries, then scoop by tablespoon fulls onto parchment lined baking sheet. Press the cherries between paper towels to remove excess juice, then press a cherry into the top of each cookie, refrigerate for 10 minutes, then bake for 10-13 minutes.
