These brownies are deceptively delicious. I’ve been in the habit of hiding zucchini in just about everything lately and there is no way anyone could tell these have zucchini. They also have 2 scoops of bone broth chocolate collagen powder in them which makes them surprisingly filling.
Personally, I plan on making some banana ice cream this weekend, warming one of these and enjoying them traditionally as a fidgey-vanilla combination that never fails.
If you are in the habit of drinking milk with chocolate, stick that glass in the freezer and get ready for elation!
1 cup almond butter
1 cup chopped zucchini
2 scoops protein powder
1/2 cup cocoa
3/4 cup coconut sugar
1/4 cup honey
1 tsp baking powder
1 tbsp vanilla extract
1/4 tsp salt
*Optional 1 cup chocolate chips
*Optional 1 cup chopped walnuts
Preheat oven to 350° and line a 9×9 baking dish with parchment paper. Mix all ingredients well and bake for 30 minutes. Allow to cool before lifting out of pan and slicing. It will be crusty on the outside and gooey on the inside, perfection.
