One of life’s simple delights is preparing my family snacks for after evening church service. It isn’t hard to put together a tray or two that are as healthy as they are pretty, and to my babies that’s as good as it gets!
On this cheese tray I toasted some almonds and walnuts, laid out brie sprinkled with cinnamon and black, blue, and raspberries. Beside the cheese are plums and dried apricots. Finally, these pecan Sandies that taste like a little piece of pecan pie.
This snack is waiting on us as we chat after church and is as exciting as any junk food out there because it’s yummy and guilt free!
Pecan Sandies Recipe:
1 1/2 cup ground pecans (food processor or blender)
1/2 cup almond flour
5 tbsp cold butter
1tsp vanilla extract
1/8 tsp salt
1/4 cup coconut sugar
1/2 tsp baking powder
*Optional cinnamon 1 tsp
Preheat oven to 350° and line baking sheet with parchment paper. Mix all ingredients mashing the cold butter in as well as possible (there will be chunks of butter left throughout). Spoon out in tablespoons and mash only slightly to get the desired shape (they’ll puff a little in the ove). If your dough is too squishy to form into balls, add a little more almond flour one tablespoon at a time until cookie dough thickness. Bake for 10 minutes or until edges begin to golden.
