Polish Turkey One Pan Wonder

My husband is of Polish descent and you’d know it by his love of cabbage. We literally have cabbage sometimes 3 times a week in some form. This recipe, like most of my recipes, uses a few common ingredients in my fridge to create a simple, tasty, and downright fresh low-carb meal.

You’ll need:

2-4 lbs ground turkey

1/2 red onion sliced

1 tbsp butter

1tsp minced garlic

2/3 cup matchstick carrots

2/3 cup red cabbage sliced thinly

1 cup chopped fresh spinach

1/2 cup fresh parsley chopped

1/4 fresh mint chopped

1/4 tsp cumin

1 tsp sea salt

1/2 tbsp lemon juice

3 Tbsp heavy cream

Sauté onion in butter until clear. Add garlic, carrots, cabbage, and sauté on medium for a minute. Add meat, salt and spinach and herbs and cook until no longer pink. Add lemon juice and cream and cook for another 3 minutes. Taste and adjust salt accordingly. 

Mmmmm, this was comfort food in its simplest form.
