Smoky Bacon Avocado Deviled Eggs

I hesitate to even say these are Paleo because they are good as a non-specific food. Period. But alas, they are Paleo friendly and that makes them a double yes.

I can’t wait for Daniel to get home and try these. There are a few dishes I fix and I know they are going to be a home run.

May I also add that these make great baby food? I fed Elijah the filling and he LOVES it!

I don’t believe we ought to limit ourselves to deviled eggs during the summer. It is my firm belief that these high-protein high-fat snacks should be enjoyed multiple times a year.

Some people cut fat out in an attempt to get healthier. This does not compute. You need LOTS of fat to be healthy, to feel full and to have amazingly delicious healthy food. This is why we eat a lot of bacon, avocado, butter and oils. Do your research people. Eat more fat.

You want the secret to easy-peel eggs every time? There’s not one. BUT! This works for me on 90% of the eggs I peel.

 

I made only 5, but you can easily double or triple this for a party or large family.

Smoky Deviled Eggs Recipe:

5 boiled eggs (cut in half and save yolks in small bowl)

1/2 medium Haas avocado

3-4 extra crispy bacon strips crumbled

1/4 cup fresh chopped parsley

1/2 small lemon juiced

2 green onions finely sliced

Smoked paprika to taste

Sea Salt and Black Pepper to taste

Mix egg yolks with everything else, mashing with a fork until the desired texture and taste. Taste as you incorporate and add salt (remembering that the egg white is slightly bland, so you may want a little more salt than you think). Fill each egg white with mixture and then sprinkle seasoning salt or sea salt over top along with any creative extra bacon or onion you may desire. Enjoy!!
