I am a ranch kind of girl. Hidden Valley, if you must know. When we decided to simplify the ingredients we were taking in, things like soy bean oil and all the preservatives in most salad dressings make them a no-no.
Since giving up ranch, I just pretty much make vinaigrettes and “make it through” my salad because I know it’s healthy, not because I enjoy it. This ends now. I enjoyed this dressing so much and it was so easy to whip up, I think it will have to be a staple in our fridge now.
Remember that Paleo BBQ sauce I made? Well, I mixed it with some coconut cream and some magical unicorn dust and a baby was born. It’s this dressing.
Since moving to Kansas City, I have begun to embrace the farmer mentality and so I call this dressing Cowgirl Ranch. Enjoy!!!
Cowgirl Ranch:
1/2 cup Kara’s Kansas City Sauce (or BBQ sauce you have on hand)
1/2 cup Thai coconut milk (this brand allows the cream and milk to separate and I like to use a little more cream than milk for this)
1/4 cup avocado oil
1 1/2 tsp apple cider vinegar
1/2 tsp onion powder
1/2 tsp parsley (dried)
Salt and Pepper to taste
Blend all ingredients on high for 1 minute and store in glass container in fridge.
*This makes the amount pictured in a small mason jar, next time I’ll double it!
**You can adjust the milk and spices for a thinner dressing if you want (I like thick dressings)
