Pork Apple Sweet Potato Skillet (Paleo)

I bought some amazing pork chops from Costco the other day and decided to give this one pan meal a whirl. It was yummo, I hope you’ll try it, it really is easy and is made entirely in one pan.

So easy right?

Pork Apple Sweet Potato Skillet Ingredients:

2 thick pork chops

6 strips uncured bacon cut up

1 tsp minced garlic

3/4 cup diced onion (I used vidalia)

1 large sweet potato

2 heads broccoli florets (fresh, not frozen)

2 Granny Smith apples peeled and chopped

1/2 cup apple juice

1 tsp cinnamon

1/4 tsp black pepper

Sea Salt (seasoning as you go to taste)

In a skillet on medium, render bacon until brown and crispy. Then chop/ cut up vegetables until bite size (the potato a little smaller than the broccoli). Cut pork into cubes and saute’ onions and pork cubes until cooked through, then remove with the bacon onto paper towels. Next, saute’ broccoli and potato until the potato starts to soften, then add pork, onions and bacon back into mixture, add apples, cinnamon and salt and pepper and mix. Finally add apple juice and allow it to steam until everything is cooked through (about 6 minutes). Enjoy!
