Paleo Sandwhich Bread

I can not convey how excited I am about this bread. As a baker, as an all around bread lover, I’ve missed bread. But! Now, within my very pantry are all the ingredients to make this delicious treat any time I so please.

Isn’t it beautiful?? It has a golden crust and a texture that is very similar to that you’d find in any store bought sandwhich bread, but is totally grain free and dairy free for those trying to avoid it.

I used this recipe and slathered on some of my homemade blueberry butter and my brain exploded.

The white flecks you see are coconut butter (essentially, coconut pured with coconut oil the same way peanut butter is made). This bread does not taste coconutty, but if it bothers your OCD to see white flecks in your bread, simply use all cashew butter or almond butter or whatever butter butters your bread!

Paleo Sandwhich Bread Recipe

1 cup cashew butter

1 cup coconut butter (or nut butter of your choice)

6 eggs

2 Tblsp apple cider vinegar

1 tsp baking soda

2 tsp honey

1/4 tsp salt

Preheat oven to 350°. Mix all ingredients well, then pour into parchment lined 9×5″ loaf pan and bake for 30-35 mins until done in the middle and deep golden. You won’t be sorry.
