This Blueberry Butter is so versatile, you literally could take a cup of any fruit and make this. I used organic butter, but there are also margarins out there that are made from olive oil that I may use in the future. The bread recipe I used is 100% paleo and 100% a miracle of modern cooking in that it tastes like real yeast bread. Amazing!
Here’s the recipe, feel free to have a lot of fun with this one. It stores so well, use on pancakes, bread, bagels, steak, chicken before baking. Ooh, so many options!!!
For this rendition I used:
1 cup blueberries
1/2 lb butter (soft)
1/2 tsp lemon juice
2 Tbsp honey
1/8 tsp sea salt
(if intended for dessert or breakfast, you may also consider adding 1 tsp vanilla extract, cinnamon or cloves)
Blend all ingredients except for butter, then mix with a spoon or butter knife leaving patches of butter and patches of blueberry pure’ for dimension when indulging.
