My babies love eggs. Sometimes if I am on the fritz trying to feed hangry young ‘uns, I’ll scramble up some eggs and mix in some veggies to “hide” them from the baby.
This particular mixture takes advantage of this season’s super highly nutritive pumpkin. Pumpkin is not available all times of the year, and this time of year is when we need it most in our bodies. It’s high vitamin A content means pumpkin is a benefit to skin and immune system.
Helpful hint: Okra’s “slimey” insides are known to help gut health.
Here’s what I put in baby’s lunch:
2 eggs
1/2 cup fresh Okra
Tsp extra virgin olive oil
1 1/2 Tbsp canned pumpkin
Sprinkle of garlic powder
Sprinkle of Himalayan sea salt
Cut and sauté Okra in oil on medium for about 3-5 mins, meanwhile mix eggs with pumpkin and spices. Pour egg mixture in and only cook until just done, but soft.
